Special Gobhi Ke Parathe
Gobhi ke Parathe, or Cauliflower Stuffed Flatbreads, are a popular and delicious North Indian dish.
Here's a special recipe to make these parathas at home:
Ingredients for Gobhi Ke Parathe:
For the Dough:
- 2 cups whole wheat flour
- Water, as needed
- Salt, to taste
- 1 tablespoon oil (optional)
For the Filling:
- 2 cups cauliflower, grated
- 1 onion, finely chopped
- 1-2 green chilies, finely chopped (adjust to taste)
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- Salt, to taste
- Fresh coriander leaves, chopped
- Ghee or oil, for frying
Instructions to make Gobhi Ke Parathe:
For the Dough:
1. Prepare the Dough:
- In a large mixing bowl, combine whole wheat flour, salt, and oil (if using). Gradually add water and knead the mixture into a soft, smooth dough. Cover and let it rest for about 15-20 minutes.
For the Filling:
1. Prepare the Cauliflower Filling:
- Heat a little oil in a pan. Add chopped onions and green chilies. Sauté until onions are translucent.
- Add ginger-garlic paste and sauté until the raw smell disappears.
- Add grated cauliflower, turmeric powder, coriander powder, garam masala, and salt. Cook until the cauliflower is tender and the mixture is dry.
- Garnish with fresh coriander leaves. Allow the filling to cool.
Assembling and Cooking Gobhi Parathe:
1. Divide the Dough:
- Divide the dough into equal-sized portions and roll them into balls.
2. Roll Out the Parathas:
- Take one dough ball and roll it out into a small circle on a floured surface.
- Place a spoonful of the cauliflower filling in the center of the circle.
3. Seal and Roll:
- Fold the edges of the dough circle over the filling to cover it completely. Press gently to seal.
- Roll out the stuffed dough into a flat, round paratha.
4. Cook the Parathas:
- Heat a griddle or tawa over medium heat. Place the rolled paratha onto the hot surface.
- Cook until bubbles start to appear on the surface. Flip the paratha and spread a little ghee or oil on top.
- Press the edges with a spatula to ensure the paratha is cooked evenly. Cook until both sides are golden brown and crispy.
5. Serve Hot:
- Remove from the griddle and place the paratha on a plate lined with a paper towel to remove excess oil.
- Serve hot with yogurt, pickle, or any chutney of your choice.
